Who's ready for a tropical comfort food perfect for this upcoming summer?
Lettuce get to it then! Here is a coconut rice recipe that I created using basmati rice.
To make the rice, 1 cup basmati rice 1 can coconut milk 1 1/2 cup water 1 TBS sugar 1 tsp salt to taste In a large pan add all the water, coconut milk and rice. Have it on high heat and wait til it boils, stir occasionally. Once boiling turn to low heat and cover for 18 min. After time is up, uncover the rice and fluff and stir. Rice should be soft, but I kept on low heat for another two minutes while stirring. Then for fun if you want add coconut flakes.
My bowl, pictured above has a Jamaican jerk sauce tofu (made by sautéing Jerk sauce, sesame oil and tofu sliced in a pan), cilantro, carmelized onions, and termeric baked cauliflower. So delish! Enjoy.
