Vegan Soft Pretzel Bites.


100% Vegan... very surprising I know. I actually got this recipe online and changed it to make it vegan friendly. I wish I could eat these every day they are so tasty. I made these for movie night with friends. Half the batch I made with cinnamon sugar and the other half I made plain with a maple mystery dip. I recommend you try this out ASAP!

For this Recipe you need:

  • 2 cups almond milk

  • 1 1/2 tablespoons (2 packets) active dry yeast

  • 6 tablespoons brown sugar

  • 4 tablespoons vegan butter, melted

  • 5 to 5 1/2 cups flour

  • 2 teaspoons fine salt

  • 1/3 cup baking soda

  • 3 cups warm water

  • Coarse salt

Directions:

  • Warm up the almond milk in the microwave for just about one and a half minutes. If it’s too hot it will kill the yeast.

  • Stir in the yeast and one tablespoon of the brown sugar and let it sit for about 10 minutes.

  • Grab a large mixing bowl or the bowl of your stand mixer and pour the mixture in it.

  • Add the butter and remaining sugar.

  • Add the flour about 1 cup at a time and the add the fine salt.

  • Knead for about 10 minutes with a stand mixer or by hand.

  • Put it in a greased bowl and cover with greased cling wrap.Let rise for 1 hour in a moist, warm place until doubled in size.

  • Preheat the oven to 450º.

  • This is the fun part, punch down the dough and divide into 12-14 lumps.

  • Roll each piece with your hands to form a rope as thin as you can.

  • Combine the warm water and baking soda in a wide bowl.

  • Cut the dough into small pieces (bite size), then dip in the baking soda water.

  • Place on a greased baking sheet and sprinkle with coarse salt.

  • Bake for about 6-10 minutes or until golden tan.

  • Dip each homemade pretzel in the melted butter while hot.

  • From here you can add cinnamon sugar or make a mustard dip!
